Graduated with a diploma in Hospitality & Tourism in 2008, compounding his learning with various internships and a Hospitality Management Course at the Tokyo Hotel Business College. After stints in top bars in New Zealand, Tokyo, Barcelona, London and after scoring the Best Whisky Bar award for his work at Albannach, Martin landed on Dubai’s shores as part of the opening team for Mahiki.

After 2 successful and very productive years in Tonique consultancy Martin decided to go his own way and become a outsource bar consultant and beverage trainer for Mandarin Oriental Shanghai.

After his experience in China, Martin moved to Barcelona where work us a consultant andproject developer for many bars and restaurants. Martin is currently in Beirut, working on multiple new openings of bars and restaurants.

Martin's love of travel and passion for experiencing the richness of culture at each of his destinations been fueled by lengthy stints in some of the top bars in all corners of the world, from Tokio to London with over 10 countries and countless cities under his belt. Deciding it was time to take a step up in the hospitality world, He started working for Tonique Consultancy as a freelance events consultant and beverage trainer, where he stayed as an integral part of the company for a successful and highly productive Two years. The Mandarin Oriental Shanghai saw his accomplishments and approached him with an offer he couldn't turn down as their outsource bar consultant and beverage trainer, taking his expertise to several locations in China and the Far East.
His next move was to Barcelona to freelance working as a consultant and project developer working for many of the city's top bars and restaurants (Ocaña, Elephant Room, Cafe Berlin).

He pours love and passion into each one of his many projects. His meticulous attention to detail and keen eye for design have given him a renowned reputation for creating bespoke drinks and cocktail menus that are aesthetically edgy while retaining a delicate piquancy that even the most refined palate will appreciate.

He has a rare savoir faire, not often found in the bar industry, allowing him to adapt his style according to each event and venue he takes on while still leaving a fingerprint on each project that anyone will recognize as quintessentially "Martin".

Tonique Talent Program

The Tonique Talent Program is a comprehensive bartender-training platform that has the aim to select and nurture a talented group of bartenders within a hotel or large-scale hospitality operation. Our training team consists of a panel of experts, trained to international standards that can pass on their technical mastery behind the bar, as well as teaching young talent the importance of bar management.
The program will take the group through all aspects of the bar business as well as providing exercises that would be directly linked to practical aspects of bar work.
The final objective is to mould and elevate these talented bartenders to become mentors and provide the hotel with the opportunity to deploy these individuals across the business to ensure company standards and provide expertise during new openings. Graduates of the Tonique Talent Program will transform homegrown talent by training them to International standards, helping to generate staff retention and loyalty.

Crafted for the Senses by Chivas 18, gives an insight into the lives of craftsmen who engage with our senses and use them to connect with and stimulate us. You will discover six such gentlemen, each from a different part of the world and each with their own style and expertise. Chivas 18 teamed up with traditional men's footwear manufacturer 'The Cobbler' for an evening of inspirational drinks designed for luxury occasions by Max Warner.

Description

MAISON is a pioneering global bartender training programme created by Pernod Ricard. It uses an innovative iPad format to bring the craft of bartending to life, enabling world-class, independent category experts to share their accumulated knowledge and passion for their profession with bartenders anywhere in the world.

MAISON is a modular programme that covers customer service, bartending skills, and detailed training in 10 major drinks categories (vodka, gin, tequila, rum, Scotch whisky, whiskies of the world, Cognac, absinthe, pastis, Champagne), covering history and production through to appreciation of spirits and cocktails.

Each module is lead by a world renowned category expert from an independent perspective via the iPad app, giving a balanced and thorough approach to training, with the benefit of bartenders’ career progression in mind. MAISON sessions in United Arab Emirates , Africa & Indian Ocean are hosted by local guru, Giovanni Depergola, International Beverage Training Manager at Tonique Consultancy.

MAISON is designed for new and experienced bartenders who are already engaged in the industry, who are hungry for knowledge and are looking to further their career in hospitality. To that end, upon completion of all modules in the MAISON programme, bartenders will be issued a Diploma from the Ecole Hoteliére de Lausanne, Switzerland, one of the top hospitality universities in the world. Participating bartenders will become members of a local and global community of MAISON bartenders, with the opportunity to communicate directly with the category gurus.

Chivas Regal is aiming to spread this message amongst the bartender community this year as it launches a bartender engagement programme, The Chivas Masters.

Over the coming months, Chivas will roll out a global five year programme, The Chivas Masters which will challenge the world’s finest bartenders to ‘travel back through time’, re-discovering the classic cocktails of the past and giving them a modern interpretation with Chivas.

TONIQUE MASTERS OF TASTE, is a new monthly series of collaborations
between TONIQUE consultancy and modern-day craftsmen who represent
excellence in field. We were thrilled to have Dan Warner, multi award-winning bartender hosting a 2 hour gin master class at Suga Dubai, Dubai.

Dan took consumers through a journey of gin discovery, using various drinks to highlight its evolution. From the early years of gin punches right through to today's modern show stoppers, marvelling at the magic of gin as versatility.

London born and bred Dan Warner has been working in and around bars for nearly 20 years. Most of this time was spent in the London bar scene, having worked with Bank Group, Zander Bar, Lonsdale and The Hospital Members Club. In 2006 Dan took up the role of Global Brand Ambassador for Beefeater Gin and spent the next five years travelling the world spreading the good gin word. In October 2011 Dan entered into the global vodka arena with Absolut Vodka; working on all areas of their on-trade activity, with a particular focus on training and education. In January 2014 Dan left Absolut and has been utilising his considerable knowledge and experience as an independent bar consultant
